Did someone say schnack? I love schnacks. Especially when they’re as quick, easy and delicious as this.
A creamy take on the classic, this bruschetta sits on a bed of creamy cottage cheese – the perfect pairing for its sweet tomato topping.
It’s so simple I feel like calling this a ‘recipe’ is overkill, but at the same time, so yum I would feel bad not sharing.
With a little protein kick, this is the perfect mid-afternoon snack to get you through to dinner.
INGREDIENTS
1 slice of sourdough
2 tbs cottage cheese
4 cherry tomatos
Couple slices of red onion
Couple basil leaves
Olive oil, salt and pepper to taste
METHOD
Toast bread until golden.
While toasting, slice tomatoes in half and onions very finely.
Top toast with dollops of cottage cheese, tomatoes, onion and basil leaves.
Season with a drizzle of olive oil, salt and pepper.
