The super simple salad saver of my dreams.
Ready in a few minutes, these salty and garlicky toasted nuts and seeds totally transform salads and soups faster than you can say ‘super-simple-salad-saver.’ Ok, maybe not quite that quick but ALMOST.
I’ve listed my faves, but you can swap the nuts and seeds out according to your preference. My only tip is to keep an eye on the heat because all those delicious, healthy fats are needy and will try to burn in protest if left unattended.
Once cooked, these babies will last a few days in the fridge – if you don’t eat them first. Best enjoyed sprinkled over salads and soups.
INGREDIENTS
1/3 cup pepitas
1/3 cup sunflower seeds
1/3 pine nuts
2 tbs olive oil
2 tbs finely chopped garlic
Salt and pepper to taste
METHOD
In a frying pan, sauté oil and garlic for a few minutes on a low to medium heat, stirring regularly.
Add seeds, nuts, salt and pepper. Stir constantly until lightly golden, and remove from hot pan. Allow to cool before eating.
